Steve Leonard

Steve Leonard is the General Manager for Kirby’s San Antonio. Mr. Leonard started with Kirby’s in 1996 at the original location on Greenville Avenue in Dallas. His career with Kirby’s has taken him to every single location in the company, including Mickey Mantle’s Steakhouse in 2000 where he spent 3 years, until moving to The Woodlands in 2003 and then San Antonio in 2008.

Mr. Leonard has an uncanny ability to talk to guests and his staff and make them feel like family. “I always try to impart what it means for me to work for this company by instilling a family feel for the guests as well as the staff” says Mr. Leonard, “I love food and wine and am thrilled to do this for a living.” Outside of work Steve enjoys spending quality time with his wife and their young son. As a UT graduate Steve is very passionate about his beloved Longhorns and follows every sport they play.

Prior to his time in The Woodlands, Steve and his wife became the first certified sommeliers in the company. He takes time out of his busy schedule to teach wine classes in various Kirby’s locations and also lent a very welcome hand helping his company open their new concept Woodfire, in late 2009.

Javier Davalos

Javier Davalos

Javier Davalos is the Sous Chef for Kirby’s San Antonio. Javier’s career with Kirby’s began in June of 2000 at the Southlake location. Mr. Davalos worked in various positions before eventually starting his culinary training after only a short few months.

Javier proved to be a natural in the kitchen, practically mastering every position the young man worked in. In the fall of 2000 Javier moved to Oklahoma City to help open Kirby’s new restaurant, Mickey Mantle’s Steakhouse. After 4 years of incredible performance, razor sharp culinary skills and natural leadership Mr. Davalos moved to The Woodlands, TX to become the Sous Chef for Kirby’s Prime Steakhouse.

During his time in The Woodlands Mr. Davalos worked closely with Corporate Executive Chef Daniel Nemec in honing his skills to eventually become the culinary expert that he his today.

One of the most dynamic aspects of dining at Kirby’s San Antonio is the daily Chef creations by Mr. Davalos. His innovative dishes impress guest on a daily basis and complement Chef Nemec’s already dynamic menu.

Sam Miller

Sam Miller

Sam is the Beverage Manager and certified Sommelier for Kirby’s San Antonio. Mr. Miller has spent over 15 years in the restaurant business working as server, bar tender and manager. Prior to working for Kirby’s Sam was a familiar face in Houston area Steakhouses. Mr. Miller worked at Perry’s, Resa’s & Prime Time. After spending some time in Ventura, California working at a quaint, chef driven restaurant, Bistro, Sam returned to Texas to help open Kirby’s Prime Steakhouse in The Woodlands, just north of Houston.

Throughout his time in The Woodlands Kirby’s Sam dazzled guest with his knowledge and passion for spirits and wine. As an avid Scotch Connoisseur and wine lover Sam proved he was ready for a career in the restaurant business. After only a few months of assisting with The Woodland’s wine program and working as a “key employee” Sam was offered the job of Sommelier and Assistant General Manager for Kirby’s newest location, San Antonio, TX.

Kirby’s San Antonio has been Sam’s home since November 2007 and he has truly made his mark with his position in his community. Mr. Miller’s wine list boasts an impressive selection with over 500 wines from all over the world & is the proud recipient of the Wine Spectator Award of Excellence.

As a manager Sam still dazzles his guest with his knowledge for food & beverage. Sam host a monthly Scotch Tasting at Kirby’s where he educates guests on Scotch, Wine & his other passion…Cigars.
