Kirby's The Woodlands Management Team

Kimberly HildebrandKimberly Hildebrand

Kimberly started her 21 year career in the restaurant industry with the Pappas’ company in 1989 when she moved back to her native Texas from Southern California. Working her way into such positions as preferred trainer, head wait, bartender & activity director, Kimberly found the atmosphere in the industry more and more enticing. She went on to manage for such concepts as Landry’s & La Madeleine. She was offered her first GM position in Austin with Texas Land & Cattle. While in Austin, she continued as a GM for TL&C and again with Landry’s, where her locations were training stores.

In 2007 Mrs. Hildebrand joined the Kirby’s Management Team as the General Manager of their San Antonio location. After a few months, she returned to the Houston area & took over the GM position in The Woodlands.

“The biggest compliment I can give Kimberly is that we rarely look outside of our own staff for members of management. We simply feel promoting within is the best recipe for success. However, on Kimberly’s first day of training she immediately embraced our family oriented style of management, our culture & our love for this profession. It was like she had been with us from the very beginning” says the company’s Training Director, Rick Shew.

Kimberly loves to cook and entertain and believes that great food & good wine can make the simplest of occasions the most memorable. There’s nothing she enjoys more than to be surrounded by family & friends at her dinner table.

Eric Saville

Eric Saville

Eric Saville is the Director of Private Events and Marketing for Kirby’s Steakhouse in The Woodlands. Eric was born in New York, but grew up in Spring Texas, and began his career in the restaurant industry in 1995.

Eric joined the opening team in The Woodlands in 2004 as a server, and shortly after became one of their favorite bartenders. After finishing up with his B. A. in Business Marketing in 2007 from The University of Houston, he was ready to become the “face” of Kirby’s Steakhouse in The Woodlands. His positive outlook and bright smile are his calling card, and he takes great pride in making sure things are done in the best taste possible to represent Kirby’s Steakhouse the brand.

Eric is highly involved in The Woodlands community, keeping in touch with all of the various media, and charity organizations. Mr. Saville continues to think of innovative and creative ways to market and promote Kirby’s Steakhouse and, as a devoted professional, also finds time to travel to other cities helping to promote the company’s other restaurants.

Oh, and he may just jump behind the bar and shake you a Martini for old time’s sakes. You’ll thank him later.

Carl Flowers

Carl Flowers

Carl Flowers has been in the restaurant industry for 12 years. Formally trained in the Houston Community College Culinary Arts Program he graduated in 2003. Much extracurricular time was spent focusing on classic French influences and charcuterie work as well as other international cuisines. The culmination of this training led to his role as Executive Chef the following year at a family owned New American cuisine restaurant. While there he not only focused on daily features but was influential in there wine program. Aspiring for even more sophisticated cuisine Carl set his sights on The Woodlands, Texas.

In 2006 Carl acquired a position as Sous Chef at Kirby’s in The Woodlands. Under Executive Chef Daniel Nemec’s guidance Carl has learned a new standard for cuisine as well as the work he performs. Carl prides himself on expanding on the customer experience in all aspects, from custom entrees to delicious desserts.

Chef Flowers daily features are an integral part of The Woodland’s dining experience complimenting Chef Nemec’s already spectacular menu.

Jeremy Stagner

Jeremy Stagner

Jeremy Stagner is the newest member of the Kirby’s Management Team but is no stranger to the hospitality business, or for that matter Kirby’s, where is has worked since 2004.

Mr. Stagner’s strong suit has always been opening restaurants. He has opened 6 restaurants ranging in conceptuality, including Kirby’s most recent locations in The Woodlands and San Antonio, TX.

His love for wine lead him to a Sommelier certification in 2008 & he continues to educate himself not only on wine, but food, scotch, & the world of beer.

Some of Jeremy’s previous companies he has held positions for include The Ritz Carlton St. Thomas (Virgin Islands), Marriott Waterway, Zula, Sambuca Jazz Café, TGIFriday’s & Grady’s American Grill

Jeremy’s management style is a direct reflection of his personality: Humble, informative, fair, concise, & incredibly friendly. “I am in this profession because I love to meet new people and make people happy. The hospitality business is the perfect fit for a guy like me.” The Kirby’s Family is grateful to have him as part of their team.

Scott Griffin

Scott Griffin

Scott has extensive experience in managing fine dining restaurants. He has worked in the industry for 17 years and has worked in all of Kirby’s Prime Steakhouse’s locations.

Mr. Griffin is a certified Sommelier who continues to attend classes to increase his knowledge. His wine list is one of the highlights of the Kirby’s dining experience and has led him to obtain the great achievement of The Wine Spectator of Excellence. “Getting noticed by Wine Spectator is exciting- however nothing is more thrilling than seeing return faces in your restaurant excited about your wine list! It’s the best”, says Mr. Griffin.

Scott prides himself on creating a warm and inviting environment for Kirby’s customers. He has the ideal mix of knowledge, style, personality and leadership to ensure that Kirby’s customers have an exceptional dining experience. Scott views every customer as a potential friend and enjoys substantial repeat business as a result of the relationships he has built.

Scott is currently the Assistant General Manager and Sommelier of the Kirby’s in The Woodlands.
